Red vinification with cap maceration of emerged marc for six / seven days at a controlled temperature. Complete malolactic fermentation following the alcoholic fermentation. Five months of aging in concrete or steel.
Ideal with local appetizers such as battuta di fassona and vitello tonnato, but also with homemade pasta, medium-structured second courses, bread and salami and pizza.
