Thomas Frissant settled in the Loire Valley in 2019, on 14 hectares of vines in organic conversion in the municipality of Mosnes. Terroirs are made up of flint and clay, and Thomas work with local varieties such as: Grolleau, Gamay, Chenin and Côt. The estate is located in the Touraine and Touraine Amboise appellation areas. Before settling in Mosnes, Thomas worked in different parts of the world. From Burgundy to New Zealand, not to mention the Northern Rhône and Clare Valley in Australia. These different trips allowed him to exchange with other wine enthusiasts and reinforced his professional competencies.
HOW
Manual harvest. Whole cluster maceration, vinification is done with wild yeast in temperature-controlled stainless steel tanks. The wine is racked and then left to age in stainless steel for four to five months.
