Italy's northeast sub-region of Valpolicella within the Veneto region at an altitude between 150 and 200 meters above sea level, on vines that have over 30 years of age.

The grapes are selected in the vineyard and placed in 200kg-crates. During fermentation, the wine is always in contact with the grape skins. It is pumped over twice a day with a delestage halfway through fermentation, favoring color extraction. During fermentation temperature is kept between 22°-24° to preserve its fresh and delicate aromas.
